The wildly popular Roujiamo originated in Shaanxi and quickly spread across the country due to its convenience and affordability, gradually becoming a true symbol of beloved, affordable street food. The popularity of Roujiamo is no accident. In addition to being economical, affordable, and delicious, its ability to evolve is one of its key characteristics. Wherever it goes, the bread and filling are adapted to suit local tastes and customs, eventually giving rise to three renowned main styles: La Zhi Roujiamo (Braised Pork in Rich Gravy), Tongguan Roujiamo (Crispy Flatbread), and Shaobing Jia Rou (Baked Flatbread with Meat).

【项目内容】

一、腊汁肉夹馍

1、饼皮选用上好面粉揉制,制作外表皮酥脆、内心宣软的白吉馍。

2、夹肉精选上好猪肉,多种调料精心汤煮,肥瘦相间,肥肉不腻,瘦肉不柴。

★ 腊汁肉夹馍外皮酥脆、绵软,腊汁夹肉浓郁醇香。配小米粥或者玉米面粥,无论外卖、堂食都特别受欢迎。

二、潼关肉夹馍

1、饼皮制作采用特殊工艺,呈现条状外观和酥脆的口感。

2、夹肉采用传统炖肉,口感更浓郁醇香。

由于饼皮酥脆,夹肉又浓香,因此非常受市场欢迎,特别适合外卖。

【Program Content】

I. La Zhi Roujiamo (Braised Pork in Rich Gravy)

1. The bread is made from high-quality flour, crafted into a Baiji bun with a crispy exterior and a soft, fluffy interior.

2. The filling uses premium pork, simmered with a variety of spices until tender. It has a perfect balance of lean and fatty meat—the fat is not greasy, and the lean is not dry.

 La Zhi Roujiamo features a crispy yet soft bun with rich, savory braised pork filling. Served with millet porridge or cornmeal porridge, it is highly popular for both takeout and dine-in.

II. Tongguan Roujiamo (Crispy Flatbread)

1. The bread is made using a special technique, resulting in a layered appearance and an exceptionally crispy texture.

2. The filling uses traditional braised pork, offering a deeper, richer flavor.

 With its crispy bread and savory filling, this style is very popular in the market, especially suited for takeout.

You may choose to learn either of the above techniques.

 



【学期和学习方式】

根据学生的实际掌握情况,学期约3-4天,学习方式为:

1、学员跟着师傅一步一步的操作,师傅会发现和纠正实际操作中的问题。

2、每一环节的问题不解决,师傅就不进行下一步的教学,保证学员不带着问题学习。

3、学员对师傅的每一操作环节都要认可和签字确认,确保技术环节不缩水。

4、学业完成后学员还要对师傅的教学予以最后质量评价,保证学员学习的权益不受侵害。


Duration and Learning Format】

The duration is approximately 3–4 days, adjusted according to the student’s actual progress. The learning format is as follows:

1. Trainees follow the instructor step by step; the instructor identifies and corrects problems encountered during hands-on practice.

2. The instructor does not proceed to the next step until issues in each stage are resolved, ensuring that trainees do not move forward with unresolved problems.

3. Trainees must acknowledge and sign off on each operational step performed by the instructor, ensuring no compromise in the teaching of techniques.

4. Upon course completion, trainees provide a final quality evaluation of the instructor’s teaching, guaranteeing that their learning rights are fully protected.
